Ingredients
3 ripe bananas
3/4 cup of dark chocolate chips (can use semisweet)
2 tablespoons of avocado oil (or other neutral tasting oil)
Toppings: chopped nuts, shredded coconut, sea salt, and/or sprinkles (use chopped nuts, sea salt, and/or shredded coconut for a healthier version)
Directions
- Line a baking sheet with parchment paper.
- Peel the bananas and cut them in half (or thirds if using very large bananas). Insert a popsicle stick in the center of one cut end.
- Place the bananas on the baking sheet with space between them and freeze for approximately 4 hours.
- Shortly before taking the bananas out of the freezer, melt the chocolate with oil (see noted below).
- Hold each banana over the bowl of melted chocolate and pour the chocolate over the banana while turning it. Immediately sprinkle the chocolate-covered banana with your toppings.
- Freeze until the chocolate sets (30-40 minutes).
- Serve or keep frozen in a container for several days.
Notes
- Use the “double boiler” method for smooth, consistent results. If using the microwave, melt the chocolate in short intervals, stirring in between.
